Asian-style Green Beans 

Steam slender young green beans with a colorful fat-free sautee of red bell pepper and mushrooms. Delicious, Exotic and not too spicy....

Ingredients:

1 large onion, finely chopped
8 ounces mushrooms, thinly sliced
1 large red bell pepper (8 to 10 oz.), seeded
and cut into thin bite-size strips
1 clove garlic, minced or pressed
3/4 to 1 cup water
3 tablespoons soy sauce
1 1/2 tablespoons honey
1 pound slender green beans, ends removed
1/4 cup salted roasted peanuts, chopped

Instructions:

Preparation time: About 20 minutes Cooking time: 10 to 15 minutes (I want it fast, talaga!)

Combine onion, mushrooms, bell pepper, garlic, and 1/3 cup of the water in a wide frying pan. Bring to boil over high heat; cook, stirring often, until liquid has evaporated and mixture begins to brown (8 to 10 minutes). Add 1/2 cup more water, stirring to scrape browned bits free. Continue to cook, stirring occasionally, until liquid has evaporated and mixture begins to brown again (about 1 minute). Repeat 1 or 2 more times, cooking until mixture is richly browned. Add soy sauce and honey; keep warm. Place beans on a rack in a 2 1/2- to 3-quart pan over 1 inch boiling water. Cover and cook over high heat just until tender-crisp (about 10 minutes). Arrange beans on a warm platter. Spoon mushroom sauce over beans. Sprinkle with nuts.

Yield: Makes 4 servings.
