Flavors of the Philippines: 
Pochero (boiled meat and vegetables)

 

Ingredients:

500 g pork belly
175 g chorizo de bilbao
1.5 tbsp. crushed garlic
200 g onions, quartered
1 tbsp whole peppercorns
2 bay leaves
400 g potatoes, peeled and quartered
400 g gabi (taro root) peeled and cut into slices
200 g saba (cooking banana) halved diagonally 
150 g green beans
400 g cabbage; cut into wedges
1 tbsp olive oil

Instructions:

Preparation time: About 20 minutes Cooking time: 30 to 45 minutes (I want it fast, talaga!)

Place the pork belly and sausage in a large casserole. Add the garlic, onions, peppercorns, and bay leaves and cover with water. Bring to the boil and cook over a moderate heat. Remove the sausage after 30 minutes . Keep warm.

Cook the vegetables in the broth, starting with the potatoes, then the taro, banana, green beans, and cabbage.

Slice the meat and arrange with the vegetables in a serving dish, then drizzle with the olive oil and a little broth. Strain remaining broth and serve as a soup.

This is good for 4 servings!
