sometimes I'm a bit lazy)
BIKOL FLAVORS:
KINUNOT NA PAGI( Flaked stingray in
hot spices)
Ingredients:
1 kilo stingray, yielding approx. 330 grams of meat
1 onion
1 stalk celery
1 bay leaf
1 tsp. black peppercorns
3 tsp.olive oil
125g chooped onion
1 tbsp. minced garlic
1 tbsp. chopped ginger
1 tbsp. chopped chili pepper
125 ml. vinegar
125 ml. coconut cream
sea salt to taste
freshly ground black pepper
Okey here are the instructions:
- Clean the stingrays thoroughly and blanch in boiling
water for one minute.
When cool, remove skin an cut into quarters.
- Bring 1.5 liters of water to the boil, add the whole
onion, celery, bay leaf
and peppercorns and boil for 3 minutes. Then add the quartered fish and
allow
to simmer for at least another 3 minutes. Remove fish, scrape off meat with
a
spoon and set aside.
- Heat the oil in a pan and sautée the garlic for 2
minutes. Then add the chopped onion ginger, chili pepper and vinegar. Simmer
for 10 minutes, the add the stingray meat and cook for a further 2 minutes.
- Adjust seasoning to taste and add the coconut
cream. Bring to the boil,
then remove from heat and tranfer to a serving dish...
